Freshness of eggs is considered by consumers as the most important criterion of egg quality. Data for this study were collected and analyzed as part of a master’s thesis by A. Juergens. Combined effects of storage temperature and duration of storage for white-egg layers at different
age are analysed and used for the prediction of changes in quality criteria.
